My sister has a paleo cookbook called Against the Grain that she got from her friend for her birthday. This recipe was one she was really looking forward to trying. She of course waited for me to come visit and make them for her. They turned out really well!
Ingredients:
2 artichokes
1/2 lemon (juiced)
1 tablespoon extra virgin olive oil
salt and pepper
Remoulade Sauce
2 tablespoons oil-based mayonnaise
1 teaspoon Dijon mustard
1 garlic clove, minced
3 teaspoons lemon juice
1 teaspoon chopped capers
1/8 teaspoon cayenne pepper
1/4 teaspoon apple cider vinegar
1 tablespoon chopped fresh parsley
salt and pepper
Preparation:
1. Fill a stock pot about half way with water and bring to a boil.
2. While waiting for water to boil, trim stalks of artichokes and trim the top inch off each artichoke.
3. Cut each artichoke in half and use a spoon to scrape out the hairy middle. Squirt artichokes with a little lemon juice to prevent browning.
4. Add remaining lemon juice to boiling water. Place artichokes in water and cook in water over medium heat for 20 minutes.
5. While artichokes are boiling, mix all sauce ingredients in a small bowl and set aside.
6. Heat a grill or cast iron pan to medium-high heat.
7. Remove artichokes from water. Drizzle with olive oil and season with salt and pepper.
8. Place artichokes cut side down on the grill or in the cast iron pan. Cook for 10 minutes.
9. Remove from heat and serve warm with sauce.
