My sister called me one afternoon asking me what she should make for dinner. She ran through what she had in her pantry, and we came up with some chicken with this asparagus. The asparagus is quite a winner.
Ingredients:
1 bunch asparagus, ends trimmed off
salt and pepper
Hollandaise Sauce:
3 egg yolks
1 tablespoon water
1 lemon, juiced
1.5 sticks unsalted butter, at room temperature
10 sun dried tomatoes, mashed into a paste
Preparation:
1. Make hollandaise sauce. Whisk egg yolks, water, and lemon juice in a skillet over medium heat. Whisk constantly until eggs are cooked but before they scramble.
2. Remove skillet from heat and add butter. Whisk in butter until it is melted.
3. Which in sun dried tomatoes. Set aside and let sauce cool.
4. In a medium skillet over medium heat, heat 1 tablespoon olive oil. Add asparagus, and season with salt and pepper.
5. Saute asparagus for 5 minutes, until cooked through. Remove from skillet and drizzle with hollandaise sauce.
