With my manager's birthday and work travel in the same week, I planned ahead and made some cookies that would hold up well for a few days in the freezer and taste fresh when I got back into town. I just moved into a new condo, and my baking supplies were dwindling. I took quick stock of what I had to be able to make something tasty. My mind immediately went to the bottle of Bailey's Irish Cream in the fridge. I was out of my usual stock of various varieties of chocolate chips, so I went with walnuts. I personally love adding nuts to baked goods but typically avoid them for work baking adventures to appeal to a broader population of coworkers.
Ingredients:
1 1/3 cup butter, room temperature
1 cup sugar
1 cup brown sugar
2 eggs
1/2 cup Bailey's Irish Cream
1/2 teaspoon vanilla
3 1/4 cups flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup walnuts, roughly chopped
Preparation:
1. Cream butter, sugar, and brown sugar together until texture is smooth.
3. Add eggs, one at a time, mixing well after each addition.
4. Add the Baileys and vanilla.
5. Sift flour, baking powder, and salt together. Gradually add dry mixture to wet ingredients.
6. Gently stir in walnuts.
7. Chill batter for at least an hour. Let come to room temperature for 20 minutes if chilled for more than 3 hours.
8. Preheat oven to 350 degrees. Line 2 baking sheets with silicone baking mats or parchment paper.
9. Place 1-inch balls of dough on baking sheet. Bake for 14-15 minutes.
10. Remove from oven and place on cooling rack. Store in an airtight container.
