I went to visit my sister at the University of Virginia. Months ago when we had talked about me visiting, we were going to go to one of her favorite restaurants that had a baked brie appetizer. She has since had to go gluten free, so we had to make it homemade at her apartment instead. I had never made homemade puff pastry, so I knew it was going to be quite the adventure to start with a gluten free version. The Gluten Free Puff Pasty recipe we followed worked really well, although it was very time consuming. Start to finish it took us almost 3 hours just to make the pastry. To make this dish, the puff pastry can be homemade traditionally or gluten free, or store-bought. I've used store-bought puff pastry to make this before, but the homemade version tasted significantly better. If you have the time, I absolutely recommend making it yourself!
Ingredients:
1 sheet puff pastry (homemade or store bought), defrosted and near room temperature
8 ounces Brie
1/4 cup jam
1 egg, scrambled + 1 tablespoon cold water
Garnishes:
honey
jam
berries: strawberries, blueberries, blackberries
nuts: almonds, walnuts, pecans
Preparation:
1. Preheat oven to 425 degrees.
2. Spray 8x8 pan with pan spray.
3. Roll out puff pasty. It should be fairly thin.
4. Place cheese in the center of the puff pastry. Leave the rind on the Brie.
5. Spoon 1/4 cup jam over the Brie.
6. Wrap puff pastry up around the cheese and jam.
7. Place in 8x8 pan. Brush with egg wash.
8. Bake for 20-25 minutes.
9. Allow to cool for at least 5 minutes. Serve with honey, additional jam, berries and nuts.
