Buffalo sauce is easily one of my favorite ingredients to cook with. A splash adds a great spice kick, but a good helping of the good stuff is a seriously awesome flavor. I have always used Frank's Hot Sauce as my go to buffalo hot sauce. I buy the big bottles at Costco and am somewhat ashamed at how quickly I go through them. Buffalo Chicken Dip is one of my all time favorite foods. I eat the dip straight up and also use it to make Buffalo Chicken Potato Skins. I started making maple buffalo sauce after I had some maple buffalo wings at a restaurant in Stowe, Vermont last year and now make baked Maple Buffalo Chicken and Maple Buffalo Chicken Wings. This chicken is a basic buffalo sauce or hot sauce and butter with a few spices through in. I bake or grill the chicken and make some vegetables to go with it for dinner and am a happy camper on a weeknight.
Ingredients:
2 chicken breasts
1/2 cup buffalo sauce
2 tablespoons butter
1 1/2 teaspoons celery seed
1/2 teaspoon pepper
1 teaspoon chili powder
1/4 teaspoon salt
Preparation:
1. Preheat oven to 400 degrees.
2. In a small bowl, stir together buffalo sauce, butter, celery seed, pepper, chili powder, and salt.
3. Place chicken in an 8x8 pan and pour sauce over chicken.
(I usually place some vegetables in the pan with to cook in the sauce with the chicken. Carrots work well!)
4. Bake chicken uncovered for 25 minutes.
5. Let chicken stand in pan for 5 minutes. Serve with vegetables and rice.
