I'm always looking for a new way to use pesto. I came up with this as a mixture of Hummus Chicken, by baking the pesto on top of the chicken, and Bruschetta Pesto Chicken Casserole, by adding tomatoes and cheese. This was really flavorful and was super easy!
Ingredients:
2 chicken breasts
1/2 cup pesto
1 tomato, sliced
1/2 cup Sartori Parmesan cheese, grated
Preparation:
1. Spray casserole dish with pan spray. Place chicken in pan.
2. Cover each chicken breast with pesto. Cover.
3. Bake at 450 degrees for 20 minutes.
4. Add sliced tomato to each chicken breast. Bake for 5 more minutes.
5. Remove from oven and sprinkle Parmesan on top of chicken and tomato.
Serve with quinoa or pasta.
