This is terribly unhealthy meal. But so so good. I make this every once in a while because I love goat cheese. This also works as a side dish to a salad and some beef or chicken. Next time I make this, I want to try using plain greek yogurt instead of cream to make this healthier.
Ingredients:
8 ounce package cheese ravioli
1 tablespoon olive oil
4 ounces goat cheese
3/4 cup cream
1/2 cup Sartori Parmesan cheese, grated
Pine nuts for garnish
Pistou:
1 large bunch fresh basil
4 cloves garlic
1/4 cup olive oil
Preparation:
1. In a food processor, blend basil and garlic until fine. Add olive oil to make a thick paste. This is the pistou.
2. Cook ravioli for half the package cooking time. Drain and toss with 1 tablespoon olive oil.
3. In a greased 8x8 pan, layer ingredients: layer of ravioli, goat cheese, pistou, remaining ravioli, cream and parmesan cheese.
4. Bake at 400 degrees for 10 minutes or until ravioli starts to turn golden at the edges.
5. Serve garnished with pine nuts.
