I had some old bananas that I needed to use up and wasn't in the mood to make banana bread or muffins. I ended up spending way too much time browsing recipes for using up old bananas and put my own spin on the best recipe I found to make these bars. The Rum Chata glaze is totally what makes these bars.
Ingredients:
3/4 cup white chocolate chips
1/2 cup (1 stick) unsalted butter, melted
1 large egg
1/2 cup granulated sugar
2 teaspoons vanilla extract
1 cup mashed banana (about 3 ripe bananas)
1 3/4 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon cinnamon
Glaze:
1/4 cup unsalted butter, browned
1 cup powdered sugar, plus more to adjust consistency of glaze
seeds from 1 large vanilla bean
1/4 teaspoon salt
2 tablespoons cream, plus more to adjust consistency of glaze
2 tablespoons Rum Chata
