Bananas rarely go to waste in my house - any not eaten get turned into muffins, pancakes, oatmeal, etc. We mix it up whether it is adding nuts, chocolate chips, or just straight banana.
Ingredients:
1 cup all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup skim milk
2 tablespoons vegetable oil
1 large egg
1 teaspoon vanilla
1 banana, mashed
dash of cinnamon
1/2 cup walnuts, chopped and divided
1 banana, thinly sliced (for serving)
maple syrup (for serving)
Preparation:
1. Preheat oven to 350 degrees. Place walnuts on a small sheet pan. Toast walnuts for 3-5 minutes, careful not to burn them.
2. Sift together flour, sugar, baking powder and salt.
3. In a medium bowl, whisk together milk, oil, egg and vanilla. Gradually whisk in dry ingredients.
4. Mix in the mashed banana. Stir in cinnamon and 1/3 cup toasted walnuts.
5. Heat a large skillet or griddle to medium. Spoon about 3-4 tablespoons of batter to make a pancake.
6. Flip when pancakes start to have firm edges and have some bubbles that are starting to burst.
7. Cook for 1-2 more minutes after flipping.
8. Keep warm on a plate covered with foil while cooking the rest of the pancakes.
9. Serve pancakes, topped with sliced bananas and toasted nuts and maple syrup.
