I've been on a huge peach kick this summer. I love them in salads, on tarts, in crisps, and on salads. This is a super easy weeknight dinner that packs a big flavor punch.
Serves 2-3.
Ingredients:
2 chicken breasts
1/2 cup BBQ sauce
3 tablespoons olive oil
2 tablespoons white wine vinegar
salt and pepper
2 peaches, thinly sliced
1 tablespoon fresh chives, chopped
1/4 cup feta, crumbled
12oz package broccoli slaw
2 pieces bacon, cooked and crumbled
Preparation:
1. Mix olive oil, vinegar, salt, and pepper with peaches and broccoli slaw. Set aside to marinate.
2. Season chicken with salt and pepper. Grill over medium heat for 18-20 minutes, flipping half way through. Glaze with BBQ sauce on grill. Remove and let rest.
3. Mix chives, feta, and crumbled bacon into the peach mixture. Split slaw onto plates.
4. Slice chicken and add on top of slaw. Serve.
