One of my goals this summer was to add more beans to my diet. I have always liked black bean burgers, but I didn't have a good go-to recipe for them. These black bean burgers are the best! This recipe makes 6 patties. I typically make a double batch, then freeze the leftover patties for easy weeknight dinners. It's best to freeze before cooking, fully defrost, then sear in a pan. These can be topped with any combination of toppings - pepper jack and guacamole, pineapple and goat cheese, brie and jam, etc. These are also great for brunch when topped with an egg.
Ingredients:
2 (14 ounce) cans black beans, drained, rinsed, and patted dry
1 tablespoon olive oil
1 sweet bell pepper, finely chopped
1 cup yellow onion, finely chopped (1/2 of a large onion)
3 garlic cloves, minced
1 1/2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
3/4 cup bread crumbs
1/2 cup feta cheese
2 large eggs
1 tablespoon Worcestershire sauce
2 tablespoons BBQ sauce
salt and pepper
Preparation:
1. Preheat oven to 325 degrees.
2. Spread beans evenly onto a baking sheet lined with a baking mat. Bake for 15 minutes until slightly dried out.
3. While beans are baking, sauté olive oil, pepper, onion, and garlic over medium heat until peppers and onions are soft, about 5-6 minutes. Gently blot some of the moisture out.
4. Place pepper, onion, and garlic in a large bowl with the remaining ingredients (cumin, chili powder, garlic powder, smoked paprika, bread crumbs, cheese, eggs, Worcestershire, BBQ sauce, salt, and pepper).
5. Stir all ingredients together, then add the black beans. Mash with a fork, leaving some larger chunks of beans. A few pulses in a food processors works for this as well.
6. Form mixture into patties, a heaping 1/3 cup of the mixture per patty.
7. Chill patties for about 10 minutes in the refrigerator before cooking. This helps them stick together better. Firm up the shape of each patty before cooking after chilling.
8. I like to sear the patties in cast iron skillet on the stove, then bake at 375 degrees for about 15 minutes total, flipping halfway through. If baking on a lined baking sheet, bake for about 10 minutes per side (20 minutes total). If grilling, grill in a grill-friendly skillet or on a greased sheet of foil for about 8 minutes per side.
9. Serve warm on a bun with preferred toppings. I like these with a slice of pepper jack cheese, tomato, guacamole, and BBQ sauce on a brioche bun.
