This simple chicken dish is great fresh off the grill. I usually make extra chicken and use the leftovers shredded on a salad for lunch at work the next day. I usually serve this with Cranberry-Almond Quinoa and grilled vegetables. If you don't have a grill, baking this chicken, covered, at 450 degrees for 25-30 minutes works too. Enjoy!
Serves 2
Ingredients:
2 chicken breasts
Blackening seasoning: pepper, salt, garlic powder, cumin, onion powder, chili powder, basil, oregano
1/2 cup honey
1 tablespoon apple cider vinegar
Preparation:
1. Trim fat from chicken breasts and rub with blackening seasoning.
2. Heat honey in microwave safe bowl for 20 seconds. Add vinegar and stir well.
3. Brush chicken with half of the honey glaze.
4. Grill over medium heat for 18-20 minutes, turning once.
5 . Drizzle chicken with remaining honey glaze.
