I was looking for some quick breakfasts for weekday mornings. Making eggs and bacon or sausage just takes time and creates dishes. I found this idea on the Thriving Home blog, and changed things up a little. These little casseroles are a great breakfast. These freeze well in plastic bags. I put 2 in each bag. They reheated well in the microwave in about 2 minutes.
Makes 12 Casseroles
Ingredients:
3-4 pieces whole wheat bread, torn into small pieces
3-4 slices deli ham, shredded
4 slices bacon, slightly undercooked and diced (a food processor works well for this)
1 cup shredded cheddar cheese
8 eggs
1 cup milk
2 teaspoons ground mustard
Italian Spice Blend: salt, pepper, garlic powder, onion powder, basil, oregano, parsley
Preparation:
1. Preheat oven to 400 degrees. Grease muffins tins well.
2. Drop bread pieces evenly in muffin tins until they come about 2/3 of the way up the tin.
3. Sprinkle ham and bacon pieces evenly in each tin.
4. Sprinkle cheese evenly in each tin.
5. Whisk together eggs, milk, ground mustard, and spices.
6. Pour egg mixture evenly in each muffin tin.
7. Bake for 15-18 minutes, until cooked through and starting to brown on top.
