This weekend was all about baking with puff pastry. My sister and I are both huge brie fans, so we made these brie cups as a late breakfast while I was visiting her. We used apricot-raspberry jam that was excellent and topped the cups with strawberries and raspberries. Absolutely will be making these again.
Ingredients:
1 sheet puff pastry, thawed and at room temperature (use gluten free puff pastry if making gluten free)
9 teaspoons brie
9 teaspoons jam
fresh berries
Preparation:
1. Preheat oven to 375 degrees.
2. Cut puff pastry into 9 squares. Place into muffin tin to form a cup. Press down in the center of the puff pastry so the center is against the bottom of the muffin tin.
3. Bake puff pastry for 8 minutes.
4. Remove from oven and add brie. Top with jam. Return to the oven for 3-4 minutes, until brie has melted.
5. Let cups sit in the muffins for a minute or two to cool and let the cheese slightly solidify. Top with fresh berries.
