My sister requested I make these over Christmas. They are extremely easy to make ahead of time, then bake for 15-20 minutes before serving. I made these as an afternoon snack on Christmas day, between brunch and dinner. We went to see the new Star Wars movie on Christmas day, which is a great movie. These were a tasty snack to come home and make after the movie. They tasted amazing garnished with sour cream.
Ingredients:
5 pounds russet potatoes
3 tablespoons olive oil
Buffalo Chicken Dip
Preparation:
1. Heat oven to 400 degrees. Rub potatoes with olive oil. Bake potatoes for an hour. Turning once.
2. Let potatoes cool for 45 minutes. Cut potatoes in half.
3. Scoop out centers of each potato half. Fill with buffalo chicken dip.
4. Bake in a pyrex dish at 450 degrees, covered with foil for 10 minutes. Remove foil and cook for another 10 minutes.
