It's squash time of year again! I absolutely love fall food time of year with all the apples, squash and pumpkin. I went to Costco, and they finally had all the fall food! The butternut squash ravioli and the harvest soup are two of my favorites. I went apple picking last weekend, so I also had a fridge full of apples just waiting to be used. I'm a huge goat cheese fan, so I went with a white wine goat cheese sauce. This is easily my favorite new idea that I've come up with in a while. I'll be making this again this fall!
Ingredients:
1 package butternut squash ravioli
1 large apple, cored and cut into bite size pieces
1 tablespoon butter
1 tablespoon olive oil
1/4 cup white wine
1 cup vegetable broth
4 ounces herbed goat cheese
1/4 cup cream
salt and pepper
Preparation:
1. Bring vegetable broth, white wine, and olive oil to a boil and reduce to half of volume.
2. Add goat cheese, salt, and pepper to sauce. Stir until cheese cheese has melted. Add cream. Reduce heat to low and let sauce thicken.
3. While sauce is thickening, boil a pot of water and add ravioli. Cook for about 8 minutes, until cooked through.
4. As ravioli boil, saute apples with butter in a skillet for 2-3 minutes.
5. Drain ravioli. Return to pot and toss with apples and goat cheese sauce. Serve warm.
