I love this pasta in the spring. There are a lot of great flavors in this dish and using milk instead of cream makes this much healthier. This takes a little bit of time to prepare, but the end result is well worth it.
Ingredients:
8 ounces uncooked linguine
1 chicken breast, cubed
2 teaspoons Cajun seasoning (or to taste)
1 tablespoon olive oil
1 red pepper, cut into bite size pieces
1 yellow pepper, cut into bite size pieces
1/2 cup red onion, sliced
3 cloves garlic, minced
1 medium tomatoes, diced
1 cup chicken broth
1/3 cup skim milk
1 tablespoon flour
3 tablespoons light cream cheese
salt and pepper
2 scallions, chopped
Preparation:
1. Combine milk, flour, and cream cheese together in a food processor. Set Aside.
2. Season chicken with Cajun seasoning, salt and pepper.
3. Prepare pasta according to package directions.
4. Heat olive oil in a large skillet over medium heat. Sauté chicken 5 to 6 minutes or until almost done.
5. Add peppers, onions, and garlic to skillet, sauté 3-4 minutes.
6. Add mushrooms and tomatoes and sauté 3-4 more minutes or until vegetables are tender. Season with salt and pepper to taste.
7. Reduce heat to medium-low; add chicken broth and pour in cream cheese mixture stirring about 2 minutes.
8. Adjust Cajun seasoning to taste, cook another minute or two until hot, then add cooked pasta; toss well to coat. Top with chopped scallions.
