I use this method as an alternative to stuffing chicken. It can take a lot of effort to trim, butterfly, and pound chicken, especially on a weeknight. Any combination of cheese and vegetables works, but this is the best I've tried thus far. My sister asked me for easy recipes to make in her college apartment, and this is one of her favorites. She, however, is not a fan of spinach and calls this "Cheesy Chicken". I usually serve this with quinoa boiled in chicken broth or lightly buttered noodles.

Ingredients:
2 chicken breasts
1/2 cup cooked spinach
10-12 slices from a block of pepperjack cheese
1/4 cup breadcrumbs
2 teaspoon Cajun seasoning
1 teaspoon paprika
Preparation:
1. Cut horizontal slits in the chicken breasts, about a half inch apart. Be careful not to cut all the way through the chicken. You should have 5-6 slits per breast.
2. Cook spinach in a skillet, until wilted.
3. Prepare foil boats for each chicken breast and place on a cookie sheet.
4. Place a slice of pepperjack cheese in each slit. I've found it's much easier to put the cheese in before the spinach.
5. Stuff a few leaves of spinach in each slit. Using a fork works well.
6. Mix breadcrumbs, cajun seasoning, paprika in a small bowl, then sprinkle on top of the chicken breasts in the foil boats.
7. Bake at 350 degrees for 30 minutes.
