Your Cup of Cake has some awesome cupcake recipes. This one takes boxed cake mix and makes it taste amazing! My sister came to visit me at school and requested I make her "cake batter something". She has always loved cake batter ice cream, so cake batter cupcakes were a logical next step! I usually have all of these ingredients in my pantry and refrigerator and can make these any time.
Ingredients:
Yellow Sprinkle Cake:
1 box yellow cake mix
1/3 cup oil
3 eggs
2/3 cup buttermilk
2/3 cup sour cream
1 teaspoon vanilla
1/4 cup multi-colored sprinkles
Note: A substitute for buttermilk at home is easy! Stir in until a tablespoon of vinegar to a cup of milk. Let stand for 3-5 minutes.
Cake Batter Frosting:
1/2 cup butter, softened
8 ounce cream cheese, softened
1 tablespoon milk
1 teaspoon vanilla
1/4-1/3 cup yellow cake mix (dry)
3-4 cups powdered sugar
Preparation:
1. Sift cake mix into a small bowl and set aside.
2. In a large bowl, combine oil, eggs, buttermilk, sour cream and vanilla.
3. Stir in cake mix until smooth.
4. Gently fold in sprinkles. Depending on the type you use, the dye from the sprinkles may start to come off in the batter, so don't over stir.
5. Fill greased or lined cupcake tins 3/4 full and bake at 350 degrees for 17-22 minutes or until a toothpick comes out clean.
6. To make the frosting, beat butter and cream cheese until smooth. Add milk and vanilla. Add 1/4 cup of yellow cake mix and beat again. Slowly add powdered sugar until you reach your desired consistency. Taste, and add more yellow cake mix to get a stronger flavor.
9. Frost onto cooled cupcakes and top with more sprinkles!
