When I was in Miami a few weeks ago, we ate a Cuban restaurant that had plantain chips, and caramelized plantains. They were absolutely delicious. So when I set out to make Mojito Chicken, I took the opportunity to make some plantains to go with it.
Ingredients:
2 plantains
1/4 cup oil
Preparation:
1. Preheat oven to 400 degrees. Line a baking sheet with foil or a silicone baking mat.
2. Cut of the ends of the plantains and slice the peel lengthwise to unwrap the plantain. Do not peel like a banana.
3. Cut diagonally into slices to optimize surface area.
4. Toss slices in oil.
5. Place on prepared baking sheet. Bake for a total of 25 minutes, flipping the slices half way through.
6. Turn the broiler on for the last few minutes, watching closely. Serve immediately.
