Chicken Fajitas are one of my go-to weeknight dinners. They are a quick, healthy meal that is one of my personal favorites. I usually have leftovers after making this dinner. I sometimes makes more fajitas the next night for dinner, or I'll make some Fajita Burritos for breakfast for the week. Using the leftovers on a salad is a new use I've gone with for the chicken, peppers and onions. This is the quickest use for the leftovers and makes my salad and lunch the next day a lot more appetizing.
Ingredients:
Chicken Fajitas leftovers
2 cups lettuce
1 tablespoon balsamic dressing
Preparation:
Toss lettuce, fajita leftovers and balsamic dressing together.
