I love Mexican food. And Margaritas. I recently went to a "Fajita and Margarita" night at a friend's apartment and made these fajitas! These are an easy dinner to make on weeknights and are simple to make for a large group. I usually do chicken, onion, and peppers with cheese and sour cream and add avocado or mango if I have those around. If I have leftovers, I make a Fajita Burrito to eat for breakfast the next day or freeze it for a later breakfast.
Serves 3.
Ingredients:
1 chicken breast, sliced into long pieces
1 tablespoon olive oil
1 red pepper, cut into long strips
1/4 onion, cut into strips
4-6 tortillas
Seasoning:
1 tablespoon cornstarch
1 teaspoon garlic powder
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon onion powder
1 teaspoon granulated sugar
salt and pepper
Suggested Add-Ins (all optional):
avocado
mango
shredded lettuce
shredded cheese
red or green salsa
mango salsa
pico de gallo
sour cream
guacamole
Preparation:
1. Prepare and mix seasoning in a separate bowl.
2. In a large Ziploc bag, place sliced chicken and olive oil. Coat chicken with olive oil. Add seasoning mixture and coat well.
3. Heat a large skillet over medium heat. Once hot, add seasoned chicken.
4. Once chicken is mostly cooked, add onion and pepper.
5. Cover and cook until chicken is done and vegetables are soft.
6. Warm tortillas in the microwave for 10-15 seconds.
7. Assemble fajitas with any other add-ins you may enjoy!
