Making Italian food is a favorite in my family. My dad makes Italian artisan cheese, so any Italian-inspired dinners go over well! This is a dinner that I love to make when I have friends over for dinner. I make this dinner with homemade tomato sauce (see Spaghetti for my recipe). I make pasta and a side salad or Garlic Bread to go with this. A tasty dinner at my house!
Ingredients:
2 large chicken breasts, filleted into 4-6 pieces
2 eggs, whisked
1 cup bread crumbs
2 teaspoons garlic powder
salt and pepper
1 cup Sartori Parmesan cheese, grated
1 cup Mozzarella cheese, grated
1 1/2 cups tomato sauce (see Spaghetti for my recipe)
1/2 box spaghetti pasta
Preparation:
1. Preheat oven to 350 degrees. Prepare a sheet pan by lining with foil and an oven safe rack. Spray well with pan spray.
2. Whisk eggs well in a small shallow bowl. On a large plate, mix bread crumbs, garlic powder, salt and pepper, and Parmesan cheese.
3. Place chicken filets between pieces of parchment or waxed paper and a meat mallet to hammer into thin filets.
4. Coat chicken filets in egg wash, then press filets into breading, coating well. Place on prepared baking sheet. Bake chicken for 12-15 minutes, flipping chicken half way through the bake time.
5. Start boiling water and cook pasta according to package directions. Allow pasta to cook with sauce heats and chicken bakes.
6. Start heating tomato sauce in a medium sauce pan over medium heat. Simmer while chicken bakes.
7. Top chicken with shredded Mozzarella cheese and cook for another 1-2 minutes, until cheese has melted.
8. Remove chicken from oven and serve with pasta, sauce, and garlic bread.
