Making Italian food is a favorite in my family. My dad makes Italian artisan cheese, so any Italian-inspired dinners go over well! This is a dinner that I love to make when I have friends over for dinner. I make this dinner with homemade tomato sauce (see Spaghetti for my recipe). I make pasta and a side salad or Garlic Bread to go with this. A tasty dinner at my house!
Ingredients:
2 large chicken breasts, filleted into 4-6 pieces
1 egg, whisked
1 cup bread crumbs
2 teaspoons garlic powder
salt and pepper
1 cup Sartori Parmesan cheese, grated
1 1/2 cups tomato sauce (see Spaghetti for my recipe)
1/6 box spaghetti pasta
GF* - To make this gluten free, substitute gluten free pasta and breadcrumbs.
Preparation:
1. Whisk egg in a small bowl. On a large plate, mix bread crumbs, garlic powder, salt and pepper, and 1/2 cup Parmesan cheese.
2. Place chicken filets between pieces of parchment or waxed paper and hammer (or use a rolling pin) to thin filets.
3. Coat chicken filets in egg wash, then press filets into breading, coating well. Set aside.
4. Start boiling water and cook pasta according to package directions.
5. Start heating tomato sauce in a medium sauce pan over medium heat.
6. In a hot skillet, brown both sides of the chicken filets (about 3 minutes per side). Once browned, transfer to a baking sheet and bake at 400 degrees for 10 minutes.
7. Top chicken with Parmesan cheese and cook for another 1-2 minutes, until cheese has melted.
8. Remove chicken from oven and serve with pasta and sauce and garlic bread.
