My dad had gotten some beef short ribs on sale at his local grocery store and brought a frozen set of short ribs to me. They sat in the freezer for several weeks before I figured out what to do with them. I knew I wanted to do something in the slow cooker, and I eventually settled on this recipe from Food that I spiced up a little. These were really good with mashed potatoes and a vegetable.
Ingredients:
1/3 cup flour
1 teaspoon salt
1/2 teaspoon pepper
3 pounds beef short ribs (bone in or boneless)
1/4 cup butter
1 cup onion, diced
1 cup vegetable or beef broth
3/4 cup red wine vinegar
3/4 cup brown sugar
1/4 cup chili garlic paste
1/4 cup Hoisin sauce
2 tablespoons ketchup
2 tablespoons Worcestershire sauce
2 tablespoons roasted garlic, minced
1 teaspoon chili powder
Preparation:
1. Place flour, salt, and pepper in a gallon Ziploc bag. Place the ribs in the bag and shake to coat well.
2. Melt butter over medium heat in a medium skillet. Brown short ribs on each side.
3. Place short ribs in the slow cooker.
4. Add the remaining ingredients to their skillet and bring to a boil. Stir to combine. Pour over ribs in the slow cooker.
5. Cover and set slower cooker to low. Cook for 8 hours.
