This was one of the first more complex dinners I started to make. This was from the time I started making it, and still today, one of my favorite Rachael Ray recipes. This dinner is a little messy, but so tasty. I love using the leftovers on a salad at work the next day.
Ingredients:
2 cups fresh shiitake mushrooms, diced (using a food processor works really well)
1 large chicken breast, diced
2 tablespoons olive oil
salt and pepper
3 cloves garlic, minced
1 inch ginger root, grated
1 orange, zested and juiced
1 red pepper, diced
1 tin, 6 to 8 ounces, sliced water chestnuts, drained and chopped
3 scallions, chopped
3 tablespoons hoisin sauce (Chinese BBQ sauce)
1 large head iceberg lettuce, core removed, head quartered
Preparation:
1. Heat oil in large skillet over medium-high.
2. Add chicken to pan and cook for 2 minutes.
3. Add diced mushroom, salt and pepper, garlic and ginger. Cook for another 2-3 minutes.
4. Add orange zest, red pepper, water chestnuts and scallions. Cook for a few minutes, stirring the mixture.
5. Add juice from orange and allow mixture to cook in juice for 2-3 minutes.
6. Add hoisin sauce and coat evenly.
7. Serve chicken mixture with lettuce to make wraps.
