My parents are going to visit my sister and my sister requested that I bake her some cookies to send along. I know she loves caramel and we went back and forth with some ideas for cookies. She ended up settling on wanted chocolate cookies stuffed with caramel.
Ingredients:
1 cup (2 sticks) butter, softened to room temperature
1 cup sugar + 1 tablespoon sugar, divided
1 cup brown sugar
2 teaspoons vanilla
2 eggs
2 1/4 cups flour
1 teaspoon baking soda
3/4 cup dark chocolate cocoa powder
48 caramels
GF* - To make these cookies gluten free, substitute gluten free all-purpose flour. My favorite to use is King Arthur all purpose blend.
Prepration:
1. Cream butter until smooth. Add 1 cup sugar and brown sugar. Beat until smooth.
2. Add eggs and vanilla and cream until uniform consistency.
3. Sift flour, baking soda and cocoa powder together. Gradually add to wet ingredients until combined.
4. Cover dough and chill for 2 hours.
5. Preheat oven to 375 degrees.
6. Roll dough around each caramel into a ball. Roll in sugar.
7. Bake cookies for 8 minutes. Cool on baking sheet for 3-4 minutes before moving to cool.
