This is the first cheesecake I ever made! This dish has some special memories of some of my early days of baking. It's creamy and the cookie crust is awesome. This is an easier cheesecake to bake, as only the crust needs to bake. The filling just needs to chill overnight. This can be made in a standard springform pan or into mini cheesecakes as in the photo above.
Ingredients:
1 package (16.5 ounces) prepared cookie dough
16 ounces cream cheese, softened
1 cup granulated sugar
4 ounces unsweetened baking chocolate, melted and cooled
1/2 pint heavy whipping cream, whipped
1/4 cup semi-sweet chocolate chips
1/4 cup walnuts, crushed
1/2 cup marshmallows
Note: I used to use ChocoBake as the chocolate in this cheesecake. It was a pre-melted, unsweetened chocolate flavoring. Nestle discontinued that product in 2015. I now use unsweetened baking chocolate.
Preparation:
1. Preheat oven to 375 degrees. Grease a 9-inch springform pan.
2. Press cookie dough into the pan, covering the bottom.
3. Bake for 15-17 minutes, until light golden brown. Cool completely.
4. Blend cream cheese, sugar and melted chocolate until well combined.
5. Add in whipped cream. Stir until just combined.
6. Spread batter over the cookie crust.
7. Top with chocolate chips, walnuts, and marshmallows.
8. Cover and refrigerate overnight. Remove sides of pan and serve.
