It is well known that I bake treats for coworkers birthdays at my office. A coworker requested cookies that incorporated both chocolate and peanut butter. You can see why we are friends. I initially tried to make a chocolate peanut butter cup cookie and failed miserably. They came out flat as a pancake and stuck to the stone cookie sheet. I wondered if my baking soda was stale (to test, place a teaspoon of baking soda in a bowl or cup and place a few drops of vinegar in it. If it sizzles, it is still good.). My baking soda was fine. They tasted okay, but looked awful. The recipe I tried was from a new baking blog I had been wanting to try. Unfortunately, that didn't work out so well for me. In a scramble to get some cookies baked in time for the birthday, I went to one of my favorite blogs, The Girl Who Ate Everything, for a chocolate + peanut butter cookie recipe. I wasn't disappointed! The cookies turned out wonderfully!
Ingredients:
1 1/2 cups flour
1/2 cup cocoa (I used the Special Dark variety)
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups granulated sugar
1/2 cup creamy peanut butter
2 eggs
1 teaspoon vanilla
1 1/2 cups semi-sweet chocolate chips
Preparation:
1. Preheat oven to 350 degrees.
2. In a small bowl, whisk together flour, cocoa, baking soda and salt and set aside.
3. Using a stand mixer, cream butter, sugar and peanut butter together.
4. Add eggs and vanilla and mix until combined. The texture should be smooth and creamy.
5. Gradually add flour mixture to wet ingredients and mix until combined.
6. Stir in chocolate chips.
7. Roll cookie dough into 1-inch balls.
8. Place on parchment paper covered baking sheet. Bake for 10 minutes.
Makes 3-4 dozen cookies.
