I almost didn't make these cookies. My friend Brooke loves mint inspired desserts, so for her birthday I was planning on making Mint Crinkle Cookies. However, I wanted a backup plan just in case I had any trouble finding mint extract. I ended up having enough time to bake both batches of cookies, and I'm so glad that I did. They are easily the best new cookie recipe I've tried in months. These cookies are chocolatey cake baked around a peppermint patty. Numerous people this weekend told me these cookies are better than thin mints.
Update: I made a gluten-free variety of these for my sister using gluten-free cake mix and Three Mustakeers bite-size candy. They turned out great, and she loved them!
Ingredients:
1 box chocolate cake mix
4 ounces (1/2 brick) cream cheese
1/2 stick butter, softened
1 egg
1 teaspoon vanilla
16-18 York Peppermint Patties
Preparation:
1. Preheat oven to 350 degrees. Prepare 2 cookie sheets with silicon baking mats or line with parchment paper.
2. Beat cream cheese and butter together. Add egg and vanilla and mix well.
3. Add cake mix and beat until well combined. Do not over mix.
4. Wrap cookie dough around each peppermint patty. Ensure that the patty is completely wrapped with dough.
5. Arrange on cookie sheets and bake for 12-14 minutes. Let cool on cookie sheet for a few minutes, then move to a cooling rack to cool completely. Top with sprinkles if desired.
