My sister requested that I made her some cookies and cream fudge before she went back to school. I also needed to make something for a food day at work. I doubled this recipe and made it in a 13x9 pan instead so we could share the fudge. This is very easy recipe that I found on Very Best Baking that was very easy to adapt to a gluten free version. This is extremely rich, but a very tasty dessert.
Ingredients:
2 3/4 cup sugar
3/4 cup (1 1/2 sticks) butter
2/3 cup (5 ounce can) evaporated milk
2 cups (12 ounce bag) white chocolate chips
1 jar (7 ounces) marshmallow fluff
1 teaspoon vanilla
1/2 package Oreos, crushed (use Glutino Oreos to make this gluten free)
Preparation:
1. Line an 8x8 pan with foil. Set aside.
2. Melt sugar, butter, and evaporated milk in a heavy saucepan. Once butter has completely melted, bring to boil. Let boil and stir constantly for 3 minutes.
3. Add white chocolate chips and stir until melted.
4. Stir in vanilla and marshmallow fluff. Stir until marshmallow fluff is evenly incorporated.
5. Pour into prepared pan. Sprinkle with crushed Oreos. Use a knife and swirl Oreos into the fudge.
6. Refrigerate for 1-2 hours, until pan is completely cool. Lift fudge from pan with foil. Cut into squares. Store in an airtight container in the refrigerator.
