I found this recipe on the blog Table for Two. I'd been wanting to make them for a while, so decided to make them when I had a few friends over for dinner along with some Maple-Bourbon chicken. The corn fritters were the highlight and something I can't wait to make again!
Ingredients:
Fritter:
1/3 cup yellow cornmeal
1/4 cup flour
1/2 teaspoon baking powder
handful parsley, finely chopped
1/3 cup milk
2 cups grilled corn, cut off the cob
salt and pepper
1/3 cup vegetable oil
Cilantro-Lime Sauce:
2 tablespoons cilantro
1/2 cup oil-based mayo
zest of 1 lime
3 teaspoons lime juice
Preparation:
1. Mix cornmeal, flour, baking powder, parsley, milk, salt and pepper together in a bowl. Stir in corn kernels.
2. Make sauce by mixing cilantro, mayo, lime zest, and lime juice together. Set aside.
3. Heat oil in a skillet over medium heat. Spoon about 1/3 cup scoops of corn mixture into patties in the skillet. Cook for about 5 minutes, until browned. Flip and cook for about another 5 minutes. Repeat until batter is gone.
4. Serve warm with sauce.
