This is a delicious, healthy side dish that I love to make with Blackened Honey Chicken. The cinnamon really makes the flavor with this.
Ingredients:
1 cup quinoa
1 cup chicken broth
1 cup water
juice of 1 lime
1/3 cup craisins
1/3 cup almonds, slivered or whole (I pulsed my whole almonds in the food processor a few times.)
1/2 teaspoon cinnamon
Preparation:
1. Boil chicken broth and water. Add quinoa and cover.
2. When most water has been absorbed, add lime juice, craisins, almonds, and cinnamon. Cover and cook until water is completely absorbed.
