I hadn't made stuffed chicken for dinner before and was in the mood to try something new, and this is what I came up with. It takes a little bit of practice to be able to butterfly the chicken well, but there are some great tutorials online for it! I usually serve this with zucchini parmesan and rolls.
Ingredients:
2 chicken breasts, butterflied
2 ounces cream cheese (1/4 package)
1/2 tablespoon dried chives
1 clove garlic, minced
salt and pepper
2 pieces bacon (optional)
Preparation:
1. Mix the cream cheese, chives, garlic, salt and pepper. Form into two balls.
2. If using bacon, cook bacon until slightly undercooked.
3. Place a ball in each butterflied chicken breast.
4. Wrap the chicken around the cream cheese ball.
5. If using bacon, wrap around chicken and secure with toothpicks.
6. Put chicken in greased baking dish. Cover and bake at 350 degrees for 35-40 minutes.
7. Remove toothpicks and enjoy!
