I made this chutney with some figs that I had leftover from making homemade granola bars. It turned out really nicely! It pairs well with gorgonzola or goat cheese on a cheese plate. Sartori makes a wonderful gorgonzola that I usually use for all my blue cheese needs. Fun fact: Gorgonzola is a specific variety of blue cheese that has roots in northern Italy.
Ingredients:
1/2 cup brown sugar
1/2 cup apple cider vinegar
2 cups figs (fresh or frozen), stems removed and quartered
1/3 cup apple, diced (not peeled)
1/2 cup white or yellow onion, chopped
1/3 cup raisins
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
dash of salt
Preparation:
1. Soak raisins in a bowl of warm water for 10-15 minutes.
2. In small pot, melt brown sugar with vinegar.
3. Add figs, apple, onion, raisins, ginger, cloves, nutmeg, and salt.
4. Bring mixture to a boil, then turn heat down to low. Cook for an hour, stirring frequently.
5. Store in an airtight container.
