My boyfriend and I went to the Middle Brow Bungalow for a few beers on Friday and it was all the homemade bread being made that stuck with us. I came home with an itch to bake some bread. I happened to come across this Tasty recipe for bread in a dutch oven. I was hooked immediately. This is extremely easy to make, it just has a lot of inactive time for the dough to proof. Was a great thing to make on Saturday while we cleaned the apartment and ran errands.
Ingredients:
2 cups lukewarm water, 90-110 degrees F
1 packet yeast (2 1/4 teaspoon)
1 1/2 teaspoon salt
4 cups flour
1 teaspoon olive oil
Preparation:
1. Mix yeast into water and let stand until the yeast starts to foam, about 5 minutes.
2. Place flour and salt together in a bowl and mix together with your hands. Create a well in the middle.
3. Pour yeast/waster mixture into the well in the flour/salt mixture. Mix together until the dough comes together. If the dough is too dry, add a tablespoon of water, if it is too wet, add a tablespoon of flour.
4. Cover dough in the bowl with a tea towel and let rise for an hour and a half.
5. After the hour and a half, take a spatula and fold the dough sticking to the edges of the bowl into the middle of the bowl. Go all the way around the bowl and fold the dough into the center. Cover with a tea towel and let rise for an hour and a half, until dough as doubled in size.
6. Lightly flour a surface. Fold dough over itself several times to fold in into a loaf shape.
7. Coat the inside of a clean bowl with olive oil. Place dough in prepared bowl and covered with a tea towel. Let rise for 45 minutes.
8. While dough is rising for the last time, preheat oven to 450 degrees. Place covered dutch oven in the oven to preheat for 45 minutes.
9. Remove hot dutch oven from the oven and remove lid. Do not grease pan. Place dough in the dutch oven and cover. Bake for 30 minutes, then remove lid. Bake for another 15 minutes, uncovered. Total baking time is 45 minutes.
10. Remove from dutch oven and cover with a tea towel to cool for 15 minutes before cutting.
