This is a monstrous creation. There is no other good word for it. It is dense and delectable. My sister came across this recipe has been texting me for weeks asking when we were going to make it. She found the recipe on Life, Love, and Sugar. That lady sure can bake and decorate! We finally got around to making it this past weekend. So, this became a 20 pound birthday cake. I'm not kidding. 20 pounds of brownie - cookie dough - frosting goodness. The original recipe just had frosting on the top, but ours turned out much uglier than the original recipe's photos.....so we frosting the whole thing to cover it up! Nonetheless this caloric nightmare tastes like heaven. This recipe is VERY long, but it only takes about an hour and half to make, assemble, frost and clean up form making this cake.
Ingredients:
Brownies
1 1/2 cups vegetable oil
3 cups sugar
3 teaspoon vanilla
6 eggs
1 1/2 cups flour
1 cup cocoa (Hershey's Special Dark)
3/4 teaspoon baking powder
1/4 teaspoon salt
Cookie Dough
3 sticks (1 1/2 cups) butter, softened
1 cup sugar
1 1/2 teaspoons vanilla
two 15.25 oz boxes funfetti dry cake mix
1 1/3 cups flour
3-4 tablespoons milk
4-5 teaspoons sprinkles
3/4 cup white chocolate chips
3/4 cup semi-sweet chocolate chips
Chocolate Ganache
6 oz semi-sweet chocolate chips
1/2 cup heavy whipping cream
Chocolate Frosting
1 stick (1/2 cup) butter
1/2 cup shortening
4 cups powdered sugar
1/2 cup cocoa
2 tablespoons milk or heavy cream
sprinkles, for topping, if desired
Preparation:
Brownie Layers:
1. Line the bottoms of three 9-inch cake pans with parchment paper. Trust me, use parchment paper rounds. It saves you a lot of hassle. I just greased the pans, which was a poor choice.
2. Mix together the oil, sugar and vanilla.
3. Add eggs and mix until well combined.
4. Combine flour, cocoa, baking powder and salt.
5. Slowly add dry ingredients to the egg mixture until well combined.
6. Pour the batter evenly into the three pans and spread evenly.
7. Bake for 25-30 minutes at 350 degrees, or until a toothpick comes out clean.
8. Remove brownies from oven and allow to cool completely.
9. While brownies cool, make cookie dough.
Funfetti Cake Batter Cookie Dough:
1. Cream butter and sugars together until light and fluffy, about 3-4 minutes.
7. Mix in vanilla.
8. With the mixer on low speed, add one entire box of dry cake mix, plus 1 1/2 cups from a second box of cake mix and mix until combined.
9. Add 1 cup flour and mix until combined.
9. Add milk and up to an additional 1/3 cup of flour to preferred thickness.
10. Stir in sprinkles and chocolate chips. Dough will be thick. Set aside.
To Assemble Cake:
Once the brownies are completely cool, it's time to put the layers together. The layers go brownie - cake batter - brownie - cake batter - brownie - frosting.
1. Place half of chocolate chips in a metal bowl.
2. Microwave half of the heavy cream until it starts to boil. Remove from microwave and pour over chocolate chips.
3. Cover bowl with saran wrap for 5-7 minutes.
4. Whisk chocolate and cream until smooth.
5. Using 2 of the same 9-inch cake pans that you baked the brownies in, add about 3-4 tablespoons of chocolate ganache on top of the brownie and spread into a thin layer. This will help the cookie dough stick to the brownie.
6. Put half of the cookie dough into the pans and spread evenly on top of the brownie.
7. Flip remaining brownie onto a serving platter or plate. This is the bottom layer brownie. Top with chocolate ganache.
8. Flip of the brownie/cake batter pans upside down onto the bottom layer brownie. The chocolate ganache will help it stick together.
9. Top middle brownie layer with another 3 tablespoon of chocolate ganache and spread thinly.
10. Place the top section of cake onto the middle layer, as in step 8.
Chocolate Frosting:
1. Beat the shortening and butter together until smooth.
2. Slowly add the powdered sugar and cocoa and mix until smooth.
3. Add water or milk and mix until smooth.
4. Frost top and sides of cake. Top with sprinkles.
