This is one of my absolute favorite things to eat. The creaminess of the goat cheese and avocado together is just wonderful. I usually use Vermont Creamery goat cheeses, as they are readily available at grocery stores near me. However, when I can find it, LaClare Farms soft goat cheese is so wonderful that, when I can find it, I use it for this recipe. Assuming I haven't eaten the whole container with a spoon... I just love goat cheese that much. If I have some fresh pineapple, I like to add that to this guacamole. It gives it some extra sweetness that goes incredibly well with the goat cheese. This guacamole can be served as a dip with chips, or as a spread on crostinis. I personally love it warm on some toasted bread. It is also great on a burger - Goat Cheese Guacamole Burger!
Ingredients:
4 ounces soft goat cheese, plain or herbed
1 avocado, peeled and pitted
2 cloves garlic, diced
1 jalapeño, seeded and diced
2 tablespoons cilantro, chopped
1 medium tomato, seeded and diced
salt and pepper
Juice of 1 lime
Optional: 1/3 cup pineapple, diced
Preparation:
1. Mash goat cheese and avocado in medium mixing bowl.
2. Add the rest of the ingredients, mix well.
