My sister absolutely loves gooey-butter anything. They are a common request from her. I made these to ship to her in a care package, where they were promptly devoured. My dad who is also not particularly a sweets guy, was a big fan!
Ingredients:
1/2 cup salted butter, softened
8 ounces, cream cheese, softened to room temperature
2 eggs, at room temperature
2 tablespoons vanilla
3 cups flour
1 1/2 cups sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup powdered sugar (for rolling cookies prior to baking)
Preparation:
1. In a stand mixer, cream butter and cream cheese together until batter is a smooth and consistent texture.
2. Stir in sugar, eggs, and vanilla on low speed.
3. Gradually add flour, baking powder, and salt on low speed until completely combined.
4. Cover mixing bowl with plastic wrap and refrigerate to chill the dough for at least 30 minutes. This is not optional. Dough needs to chill to prevent cookies from spreading too much during baking.
6. Preheat oven to 350 degrees and line two baking sheets with silpat mats or parchment paper. Prepare powered sugar in a small bowl.
7. After dough has chilled, roll heaping 1 tablespoon-sized balls of dough between your palms to evenly roll dough. Toss balls of dough in powdered sugar until well coated. Place cookie dough on prepared baking sheet.
8. Bake cookies on 350 degrees in center rack for 10-12 minutes. Cookies should have firm edges but not be browning. Use a flat spatula to just slightly flatten cookies when warm from the oven. Cool cookies completely on baking sheet before storing.
