One of my favorite cheeses that Sartori makes is the Docina Gorgonzola. I make a Blue Cheese Spread with it that is great with veggies and on crostinis. I took that one step further and added an egg and some hot sauce for brunch this morning. Was a great way to start off the day and something that would be pretty easy to make for a small group.
Ingredients:
Blue Cheese Spread
2 tablespoons fresh chives, chopped
2 tablespoons fresh parsley, chopped
2 cloves garlic, minced
2 tablespoons walnuts
8 ounce brick cream cheese, at room temperature
1/2 cup Gorgonzola, crumbled
6 eggs
6 baguette slices
salt and pepper
hot sauce
Preparation:
1. Make blue cheese spread. Mix walnuts, chives, parsley, and garlic a food processor. Add cream cheese and blend well. Add Gorgonzola and pulse several times, until incorporated. Season to taste with salt and pepper.
2. Preheat over to broil. Lay baguette slices on a cookie sheet and spread a heaping tablespoon of blue cheese mixture on bread. Place cookie sheet under broiler for about 3 minutes, watching closely. The spread and edges of the bread will start to brown when the crostinis are heated through.
3. Heat large flat skillet over medium heat. Crack eggs into skillet and cook sunny side up. Season with salt and pepper. Cover to speed up cooking.
4. Remove crostinis from oven and top with an egg and drizzle with hot sauce.
