La Brioche is a restaurant I went to frequently for breakfast in college that had green eggs and ham on the menu. I made it at home this morning and it turned out great! I made toast to go with it, but Breakfast Potatoes would be delicious as well.
Ingredients:
3 eggs
3 pieces Canadian bacon, cooked and cut into 1/2 inch pieces
3 tablespoons milk
1/2 teaspoon garlic powder
salt and pepper
1/4 cup Sartori Parmesan cheese, grated
3 tablespoons pesto
Preparation:
1. Whisk eggs, milk and salt, pepper and garlic powder together in a small bowl.
2. In a medium skillet over medium heat, scramble eggs.
3. When eggs are almost done, stir in pesto.
4. Add Canadian bacon and top with Parmesan cheese. Let cheese melt and remove from heat.
