I made a bunch of appetizers for the Packers playoff game, including this awesome grilled watermelon! The last second hail Mary pass for the second time this season was unbelievable. Unfortunately, overtime didn't go our way. But I made a bunch of great food! The sauce is extremely flavorful and wonderfully complements the warm watermelon. This is a great recipe from a food blog that I love - Sarcastic Cooking. This was highly enjoyed in the winter, but would be a great spring/summer appetizer at a backyard cookout! The wooden skewers need to be soaked in water for at least an hour prior to grilling.
Ingredients:
3 cups watermelon, cut into cubes
1 teaspoon sugar
2 tablespoons blueberry greek yogurt
2 teaspoons milk
2 teaspoons lime zest
3 teaspoons powdered sugar
Preparation:
1. Soak 3-4 wooden skewers in water for at least an hour prior to grilling to prevent them from burning.
2. Place several watermelon cubes on each skewer. Sprinkle cubes with sugar.
3. Heat grill to medium heat.
4. Place skewers on the grill. Grill for four minutes on each side.
5. While the watermelon is grilling, mix together the yogurt, milk, lime zest, and powdered sugar in a small mixing bowl.
6. Serve watermelon warm with sauce.
