This is a great summer grilling recipe. The mango-pineapple salsa packs a ton of flavor, so not much seasoning is needed for the fish. The salsa does take a while to prepare, so start with making the salsa before grilling the fish. The leftover salsa is great with chips or on fajitas or tacos.
Ingredients:
Mango-Pineapple Salsa
4 filets Halibut (or other whitefish)
salt and pepper
Preparation:
1. Season fish filets with salt and pepper.
2. Heat grill to medium heat. Clean and oil well.
3. Grill fish for about 5 minutes per side, until flaky.
4. Top with mango-pineapple salsa.
