My mom likes to get large bags of potatoes at Costco and split them with me, so I end up eating a lot of potatoes. These herbed potatoes go well with meat and fish. You can use dried or fresh herbs in the potatoes, depending on what is in season.
Ingredients:
2 russet potatoes, peeled and cubed
1/4 cup milk
2 tablespoons butter
1 teaspoon chives
1 teaspoon parsley
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
Preparation:
1. Boil a medium pot of water over medium heat. Boil potato cubes for 15 minutes or so, until tender.
2. Drain water and add milk and butter to potatoes. Mash potatoes.
3. Add spices and mix well.
