This recipe originally came from Confessions of a Cookbook Queen. I first saw it on one of my favorite blogs The Girl Who Ate Everything. I, of course, made some of my own modifications to make them chocolatier. My family loves these cookies, with my sister's boyfriend requesting them. I made these for my office's Christmas Cookie Competition. I won 2 out of 3 categories for Most Creative and Best Overall. These cookies are fairly easy to make and are delicious. I highly recommend them!
GF* - To make these cookies gluten free, substitute gluten free flour. I prefer to use King Arthur gluten free flour that is already pre-mixed with tapioca flour, rice flour and potato starch to be a direct substitute for all-purpose flour.
Ingredients:
2 sticks salted butter - softened
1 cup granulated sugar
2/3 cup brown sugar
2 eggs
1 teaspoon vanilla
3 1/4 cups flour
3/4 cup hot chocolate mix (Swiss Miss works best!)
1 teaspoon salt
1 1/4 teaspoon baking soda
3/4 cup each white, milk, and semi-sweet chocolate chips
marshmallows (3-4 per cookie, 100-150 total marshmallows)
Preparation:
1. Cream butter and brown and white sugars until smooth.
3. Beat in eggs and vanilla until combined.
4. In a separate bowl, combine flour, hot chocolate mix, salt and baking soda.
5. Incrementally add dry mixture to wet ingredients, making sure all is incorporated. Fold in chips.
6. Chill the dough for an hour.
7. Roll dough into 1 inch ball and place on baking sheets lined with parchment paper or stone baking pans.
8. Bake for 9 minutes at 350 degrees.
9. Press marshmallows into the cookies and bake for about two minutes more. Wait until the marshmallows puff slightly before removing the cookies from the oven.
Makes 5 dozen medium cookies
