The first time I had this version of key lime pie was in Gulf Shores, Alabama on spring break in college. I haven't had anything else that compares to this version. The crust can be made from scratch or a pre-made version works as well. As it is Pi Day today, this was my pie of choice. A favorite for sure!
Ingredients:
Graham Cracker Pie Crust
1 1/4 cup crushed graham crackers
1/4 cup (1/2 stick) melted butter
1/4 cup granulated sugar
Filling
5 egg yolks
1 can sweetened condensed milk
1/2 cup lime juice (Nellie and Joe's is the best!)
1 teaspoon lime zest
Topping
1 pint heaving whipping cream
1 tablespoon granulated sugar
Preparation:
1. To make crust, mix crushed graham crackers, sugar and butter. Press into pie pan and bake at 375 degrees for 8-10 minutes. Set aside to cool. A pre-made graham cracker crust can be substituted for this.
2. To make filling, beat egg yolks until light and fluffy.
3. Add condensed milk, lime juice, and lime zest and blend well.
4. Pour filling into crust. Bake at 350 degrees for 15 minutes. Cool completely.
5. While key lime pie cools, make whipped cream topping. Whip together whipping cream and sugar until peaks form. Top pie with whipped cream.
