I make this lasagna with homemade tomato sauce and lots of cheese. It's a crowd pleaser! It takes quite a while to prepare. I usually double the sauce and freeze half for the next batch of lasagna. This can be prepped a day ahead of time and baked the following day. I serve this with a side salad and garlic bread. My dad hates cottage cheese, so I substitute ricotta cheese when I make it for him.
Ingredients:
1 package (16 ounces) lasagna noodles
For the Sauce:
1 pound lean ground beef
8 ounces tomato sauce, homemade or canned (see Spaghetti for my recipe)
1 can (28 ounces) crushed tomatoes
1 clove garlic, minced
1/2 cup onion, diced
1/8 teaspoon granulated sugar
Italian Seasoning Blend: salt, pepper, oregano, basil, parsley
For the cheese:
1 pound small curd cottage cheese
3 eggs
1 cup grated Sartori Parmesan cheese
Salt and pepper
1/2 pound mozzarella cheese, shredded
1/2 pound Sartori Montamore cheese, shredded
Preparation:
1. Boil a large pot of water. Boil noodles for 8-10 minutes, until al dente. Drain and set aside.
2. Cook ground beef in a large skillet over medium heat, until brown. Add tomato sauce, crushed tomatoes, garlic, onion, sugar, and spices. Bring to a boil, then set aside.
3. In a separate bowl, combine cottage cheese, eggs, Parmesan cheese, and spices.
4. In a 9x13 baking dish, place 2 layers of noodles on the bottom of the dish. Lay 1/2 the cheese mixture, 1/2 Montamore cheese, 1/3 of the sauce. Repeat layers. On top of top layer of noodles, top with remaining sauce and all mozzarella cheese.
5. Cover with foil and bake for 35 minutes at 375 degrees. Remove foil and bake for 5-10 more minutes. Let cool for 10 minutes before cutting.
