I've been wanting to make a lemon poppy seed bread for quite some time. I came across this recipe in a Pampered Chef booklet I found right before I moved a few months ago. I finally had the chance to make this bread, and it's great! Several coworkers had the chance to try it and really enjoyed it. This bread will absolutely make it into my normal baking rotation of favorite items.
Ingredients:
2 cups flour
2 tablespoons poppy seeds
1 tablespoon baking powder
1/4 teaspoon salt
1/3 cup butter, softened
3/4 cup sugar
3/4 cup milk
1/4 cup lemon juice
1 egg, at room temperature
zest of 1 lemon
Glaze:
3/4 cup powdered sugar
1-2 tablespoons lemon juice
1 1/2 teaspoons lemon zest
Preparation:
1. Preheat oven to 350 degrees. Grease and line a bread pan with parchment paper.
2. In a small bowl, sift together flour, salt, baking powder, and poppy seeds.
3. Cream butter and sugar together. Add milk, lemon juice, egg, and lemon zest. Mix until well combined.
4. Gradually add dry mixture. Stir until just mixed.
5. Pour batter into prepared bread pan. Bake for 65-70 minutes, until center is set.
6. Allow bread to cool for 10-15 minutes. Remove from pan and allow to cool on a wire rack.
7. Make glaze. Stir together powdered sugar, lemon zest, and lemon juice. Pour over top of bread. Let set. Cut bread into slices.
