I first made these cupcakes several years ago to the company I was interning at in college. They are a definitely a little different, but that's why I like them. I recently learned that my friend Megan loves malted milk balls, so I of course had to make these again for a work food day.
Ingredients:
Cupcakes:
2 3/4 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups malted milk powder
1 cup vegetable oil
3 large eggs
1 cup sour cream
3/4 cup buttermilk
1 1/2 tablespoons vanilla
1 cup sugar
1/4 cup brown sugar, packed
Note: To make some buttermilk at home, stir 1 tablespoon white vinegar into 1 cup of milk. Let stand for 5-10 minutes. Stir well before measuring out what you need and using in cupcakes.
Frosting:
1 cup (2 sticks) unsalted butter, softened
8 ounces (1 package) cream cheese, softened
2 tablespoons vanilla extract
2 teaspoon malted milk powder
4 cups powdered sugar
Preparation:
1. Sift together flour, baking soda, baking powder, and malted milk powder in medium bowl.
2. In a large bowl, whisk together oil, eggs, sour cream, buttermilk, and vanilla.
3. Mix in sugars to wet ingredients.
4. Slowly add flour mixture to wet ingredients. Stir until well combined.
5. Fill greased or lined muffin tins 2/3 of the way full.
6. Bake at 350 degrees for 19-21 minutes.
7. While cupcakes are baking and cooling, make frosting. Cream together butter and powdered sugar. Add vanilla.
8. Gradually add powdered sugar to frosting until smooth.
9. Frost cupcakes.
