As I mentioned in the post for Maple Buffalo Chicken, when my mom, sister and I were in Vermont on vacation, maple syrup was involved in a lot of dishes. We went to Stowe, Vermont on a day trip and I had maple buffalo wings for lunch. I immediately came home and made a baked chicken breast version of the spicy and sweet sauce I had in Vermont. My sister's birthday is New Year's Day, and she requested maple buffalo chicken wings. These wings are baked rather than fried and have the same delicious sauce as the baked chicken breast version. These are great for parties!
Ingredients:
1 cup Frank's hot sauce
1 cup maple syrup (use real maple syrup without corn syrup added)
1 tablespoon brown sugar
1 tablespoon Cajun seasoning (see note)
3 dozen chicken wings
salt and pepper
Note: To make cajun seasoning at home, mix 1/4 cup paprika, 1/4 cup salt, 3 tablespoons pepper, 1 tablespoon onion powder, 2 teaspoons cayenne pepper, 1 1/2 teaspoons oregano, and 1 1/2 teaspoons thyme. Use as needed in recipes. Most store-bought cajun seasonings are not gluten free, whereas making it at home is gluten free.
Preparation:
1. Combine hot sauce, syrup, brown sugar and cajun seasoning in a saucepan over medium heat. Stir until brown sugar is completely dissolved, about 5 minutes. Heat for 10-15 minutes, stirring occasionally.
2. Line a large cookie sheet with foil and place a baking rack on sheet. Place wings on rack. Season with salt and pepper.
3. Bake wings at 400 degrees for a half hour.
4. Divide maple buffalo sauce in half. Toss the wings in half of the sauce. Serve wings with extra sauce on the side.
