I am always on the hunt for easy weeknight dinners, especially fish. This salmon recipe from Dishing Out Health is an easy favorite! I usually make brussels sprouts or carrots to go with this.
Ingredients:
2 salmon filets
3/4 teaspoon salt
1 orange, zested and juiced
2 tablespoons maple syrup
1 tablespoons Dijon mustard
1 teaspoon paprika
3/4 teaspoon ground ginger
1/2 teaspoon ground pepper
1/2 cup peacans, finely chopped
Preparation:
1. Preheat oven to 375 degrees. Prepare a 11x7 baking dish. Spray with pan spray.
2. Pat salmon dry with a paper towel. Season with salt.
3. In a medium bowl, combine orange juice and zest, maple syrup, Dijon mustard, paprika, ginger, and pepper.
4. Spoon mixture over salmon. Let marinate for 15 minutes.
5. Top salmon filets with chopped pecans. Press gently into the salmon.
6. Bake salmon on the middle rack in the oven for 15-20 minutes for medium well.
